Life is crazy, do you agree? But no matter how crazy life gets, there are always things that have to be done. One of those things is dinner. There are some days that I wish I had a personal chef who would cook every night of the week, but let’s get real, that’s never going to happen. One thing that does make life easier is quick and delicious meals. This Green Bean, Chicken, & Potato Bake is one of those quick (but delicious) meals that I make quite frequently. It’s a snap to throw together, and in an hour you have a delicious meal all in one dish!
I first saw this Green Bean, Chicken, and Potato Bake on High Heels and Grills, but I have made some slight changes that I really like, so I decided to share it here on our blog.
I have made this Green Bean, Chicken, and Potato bake recipe a lot! In the beginning I tried it different ways to figure out what we like the best. One thing that I have decided is that for this recipe I prefer to use frozen green beans. I have tried canned, and I think I even tried fresh, but I like frozen best.
I have also tried different potatoes. For this one, I just use what I have on hand. I have used Russet potatoes, and loved it, and I have used red potatoes and loved it. When I use red potatoes, I just give them a wash, and keep the skins on. When I use Russet, I give them a wash, and peel most of the skin off (but I do keep a little skin on, that’s just how we roll in our house).
As far as the chicken goes, I use the thin sliced chicken breasts from Costco. They are the perfect size, and since they’re thin I can just use a whole breast and skip cutting it into pieces.
Another addition that I tried and have loved is adding cheese. I usually sprinkle parmesan or mozzarella over the whole thing the last 5 minutes of baking. It’s not necessary, but it adds a little bit more.
I have even added cheddar cheese over the potatoes, yum! Once when I planned to make this I only had half an envelope of Italian Dressing mix. Luckily I had Ranch dressing mix, so I sprinkled both over everything, and it tasted great. Don’t like green beans? Then replace with carrots instead. You could do this so many different ways, and I’m sure it would come out amazing!
